We bring you an authentic Dalmatian cuisine recipe: Dalmatian Brodetto (fish stew) Simmer 1 kg of chopped red onions, parsley and garlic in olive oil; add 1 kg of sliced tomatoes and a spoonful of tomato concentrate. Simmer until you have a thick sauce. Add pieces of fish for stewing, about 2 kg, simmer a bit, and add white wine to cover the fish and 1 dl of vinegar. Cook until the fish is completely cooked and the sauce is thick. Then add a handful of capers and chopped shallots, some chili peppers and leave it for a while. Serve with polenta.
